Scramble-y Scrambles

I’ve recently rekindled my love for scrambles. They’re easy, extremely fast, and keep me full for a good amount of time (always important!).

I use leftovers from dinner the night before, which has been a great way to change up the flavor and textures to create something new and exciting. I also heat the egg as little as possible, just enough to cook the egg whites. I like the moisture runny egg yolks add; plus the nutrients stay in tact.

Garlic sausage, kale/rainbow chard/pattypan squash/zucchini stir fry, and a sprinkle of freshly made kale chips.

Venison, acorn/delicata/sweet dumpling squash oven-roasted with coconut oil, honey and cinnamon.

I know I know, this isn’t “really” a scramble… but I loved this! It was cooked over a campfire when we went camping recently.

Another favorite of mine, that I unfortunately do not have a picture of, was made with oven-roasted chicken and sweet potatoes roasted with a drizzle of maple syrup and spices. It was AHHH-MAZING!
